Roasting and Cooking Prime Ribs

Main function: Multi-stage cooking
Ingredients
- 1 1/2 cups barbecue sauce
- 1 cup tomato sauce
- 1 cup apple cider vinegar
- 2/3 cup firmly packed brown sugar
- 2 long red chilli, finely chopped
- 4 garlic cloves, crushed
- 4 teaspoons smoked paprika
- 3.0kg American-style pork ribs
- thinly sliced red chilli and oven-baked potato wedges, to serve
Method
Combine BBQ sauce, tomato sauce, vinegar, sugar, chilli, garlic and paprika. Coat the pork ribs in the marinade and refrigerate for at least 1 hour or up to 6 hours (time permitted)
On the Turbofan Click Recipes
Click the Chef’s Hat – enter your password
Press Plus key to add a new recipe
Enter Recipe Name e.g. “Ribs”
Add a photo by selecting an image (the oven is preloaded with many photos to choose from or upload your own)
Choose a category e.g. Pork and then press tick
Select Mode of Cookery
Convection or Moisture Injection
First stage: select convection, 200C, 5mins, Fan Speed High to sear the ribs
Second Stage: press plus key, select Moisture Injection, Level 2 moisture, Time 50 mins
Third Stage: Caramelise and finish off the ribs, press the plus key, Convection Mode: 200C, 5mins, Fan High
Press tick to save the recipe.
Add marinated ribs to the oven on the wire rack, select Recipes click on pre-programmed “Ribs recipe”
Press Play to start the cooking process
Timer beeps when finished
Remove from oven – ready to serve!
